Perfect Picnic Addition
This week's garden variety is.....CABBAGE!
Cabbage is a powerful plant, and ancient healers declared it contained the powers of the moon because it grew in the moonlight. Modern science understands the power of cabbage comes from its high sulfur and vitamin C content. This food is ideal for weight loss because it has a high fiber and low calorie and fat content. It is full of vitamin K and anthocyanins which help with mental function and concentration. Cabbage can also help beautify us from the inside out as the sulfur internally is essential for keratin, a protein substance necessary for healthy hear, nails and skin.
Cabbage may not be the sexiest veggie in the garden, but with all its health benefits, and it bursting out of my garden right now, I wanted to be sure to share a tasty recipe. This recipe is one I hold foldly because to me, it just isn't a picnic or BBQ without some good ol' cole slaw. But, we all know that slaw isn't always the healthiest addition to a meal so here's a great way to get your slaw fix, without the heaviness it traditionally comes with. So what are you waiting for? This recipe is perfect for a backyard BBQ or picnic in the woods during Labor Day Weekend.
Ingredients
Slaw
Small or Medium Head of Cabbage
1 Cup Halved Seedless Grapes
1/2 Cup Orange Segments
1 Large Carrot, Shredded
Dressing
1/4 Raw Sugar
1 Tablespoon Minced Fresh Onion
4 Tablespoons Apple Cider Vinger
1 Teaspoon Poppy Seeds
4 Teaspoons Olive Oil
1/2 Teaspoon Dry Mustard
Pinch of Salt to Taste
Instructions
Cut cabbage into thin confetti strips. Combine with sectioned oranges and grapes in a large bowl.
Prepare dressing by combining all dressing ingredients by stirring with a whisk until sugar dissolves.
Add dressing mixture to cabbage mixture and toss well. Cover and chill for 30 minutes before serving.
